Tasting Notes
Fairly full bodied, with black cherry, prune and roast meat flavours, with an elegant, mellow aftertaste. Try with fillet steak and barnaise sauce, or with braised or stewed lamb. It is equally at home with chicken or pork with prunes.
History
The Bichot Family started a relationship with the House of Jean Bouchard in 1926, going on to purchasing the House in 1955 and in the time that has followed their wines have gone from strength to strength.
Regional Information
Located at the heart of the Cte Chalonnaise, Mercurey is one of the largest viticultural appellations in Burgundy with its 650 ha of vineyards, 85 village appellations and 32 Premiers Crus. The exposure of Mercurey's vineyards ranges from east to south and the stony brown soil is well drained and rich in clay, overlying hard Oxfordian limestone formations
Vinification Details
Vinification takes place in stainless steel tanks with temperatures maintained at 20C in order to preserve the freshness and fruitiness of the varietal. 20% of the cuve was aged in 3-year-old oak barrels
